5-6 pork chops
1 c Italian bread crumbs
½ grated Parmesan cheese
¼ tsp salt
½ tsp pepper
¼ tsp onion powder
3/4-1 c mayo
Use the tenderizer side of a mallet and pound out pork chops. In a bowl combine mayo, pepper, Parmesan, salt, and onion powder. Mix well. Pour bread crumbs into a separate bowl. Coat the pork chops with the mayo mixture and then coat in the bread crumb mixture so that both sides are coated. Place on a cooling rack on a cookie sheet and bake at 400 degrees for 30-40 minutes. Let rest 5-10 minutes before serving.

Stuffed Bacon Wrapped Chicken
4 oz cream cheese
½ c Italian bread crumbs
½ c thawed and drained frozen spinach
½ tsp salt
½ tsp pepper
1 egg lightly beaten
½ c diced mushrooms
2/12 c cooked and cooled flavored rice
5-6 chicken breasts
10-12 strips of uncooked bacon
Slice chicken length wise but don't cut all the way through. Lay flat between wax paper pound with a meat mallet to make the chicken lay flat. In a medium bowl mix all other ingredients until well mixed. Scoop 1/3 of a cup into the center of the chicken. Roll it and then wrap two slices of bacon around it. Continue to do this to all the chicken breasts. Place a cooling rack on a cookie sheet and put the chicken on top. This will help the bacon on the bottom to get crisp a little too. Bake at 400 degrees for 30-45 minutes or until chicken is cooked all the way through.

Shepherd's pie
3 tbsp minced onion or 1 tsp onion powder
1 lb ground beef
½ tsp pepper
½ tsp salt
1 tsp minced garlic
2 tsp Worcestershire sauce
In a large pan cook until meat is browned all the way through.
2 15oz cans tomato soup
2 c sliced green beans
5-6 c mashed potatoes
4-5 c shredded cheese
Add green beans and tomato soup and mix. Pour into a lightly greased casserole dish and sprinkle 2 c of cheese. Then add the mashed potatoes on top. Sprinkle the rest of the cheese on top and bake at 350 degrees for 20-30 minutes or until bubbly.

1 tbsp lemon seasoning
2 c mixed veggies
¼ tsp curry powder
4 c wide egg noodles
Add chicken stock, garlic, bay leaves, curry, and lemon seasoning. Bring to a boil. Add chicken and noodles and let cook on medium high heat for about 20 minutes until noodle are tender.

Baked Ham
1 whole ham (5-8 lbs)
½ c pineapple juice
1 tbsp orange juice concentrate
3 tbsp Maraschino cherry juice
6-8 whole cloves
½ c brown sugar
1 can pineapple chunks
Place ham in the crock pot and score it. Cook on low for 1-2 hours Place cloves in the scores and pine apples on top. In a small bowl mix brown sugar, pineapple juice, orange concentrate, and cherry juice. Stir until glaze becomes smooth. Pour over ham for last hour. Baste with juices and sauce every 15-20 minutes during the last hour.

1/8 tsp ground cloves
1/2 tsp mustard
3 tbsp apple cider vinegar

Whisk together all ingredients in small sauce pan over medium heat. When it bubbles and is thickened remove from heat. This can be served on the side, you can drizzle it on, or you can pour it over the ham for the last 10-15 minutes of cooking time.
