4 Chicken breasts diced (1/4-1/2 inch in size)
3 tbsp chicken better than bouillon
4 c water
4 dried or fresh bay leaves
1 tbsp Worcestershire sauce
1 15 oz can black beans
1 15 oz can kidney beans
1 28 oz can diced tomatoes

8 oz diced green chili's
1 tbsp chili powder
1 tsp Italian seasoning
¼ tsp oregano
¾ tsp cumin
2 tsp salt

1-2 c corn

Fried tortilla strips or tortilla chips
Put all of the ingredients but the corn into a large crock pot and cook on low for 6-8 hours. Add corn 15 minutes prior to serving. Serve and top with favorite toppings.

Chicken Marsala
8 oz baby Portabello mushrooms quartered
1 tsp salt
1 tsp pepper
4-5 Chicken breasts quartered
1 C Marsala cooking wine
2 tbsp chicken better than bouillon
3 c water
4 tbsp butter
3/8 c corn starch
2/3 c water
Combine mushrooms, chicken, water, wine, butter, and bouillon. Sprinkle salt and pepper on top and cook on low in the crock pot for about 6-8 hours or on high for 2-4. Pull out the chicken and cover with foil. In a small bowl mix cornstarch and water. Whisk into the sauce to thicken. Serve over chicken. (You can cut this in half but we liked it served over the chicken and mash potatoes)

¼ tsp salt
½ tsp pepper
¼ tsp onion powder
3/4-1 c mayo
Use the tenderizer side of a mallet and pound out pork chops. In a bowl combine mayo, pepper, Parmesan, salt, and onion powder. Mix well. Pour bread crumbs into a separate bowl. Coat the pork chops with the mayo mixture and then coat in the bread crumb mixture so that both sides are coated. Place on a cooling rack on a cookie sheet and bake at 400 degrees for 30-40 minutes. Let rest 5-10 minutes before serving.

½ tsp salt
½ tsp pepper
1 egg lightly beaten
½ c diced mushrooms
2/12 c cooked and cooled flavored rice
5-6 chicken breasts
10-12 strips of uncooked bacon
Slice chicken length wise but don't cut all the way through. Lay flat between wax paper pound with a meat mallet to make the chicken lay flat. In a medium bowl mix all other ingredients until well mixed. Scoop 1/3 of a cup into the center of the chicken. Roll it and then wrap two slices of bacon around it. Continue to do this to all the chicken breasts. Place a cooling rack on a cookie sheet and put the chicken on top. This will help the bacon on the bottom to get crisp a little too. Bake at 400 degrees for 30-45 minutes or until chicken is cooked all the way through.

3 tbsp minced onion or 1 tsp onion powder
1 lb ground beef
½ tsp pepper

In a large pan cook until meat is browned all the way through.
2 15oz cans tomato soup
2 c sliced green beans
5-6 c mashed potatoes
4-5 c shredded cheese
Add green beans and tomato soup and mix. Pour into a lightly greased casserole dish and sprinkle 2 c of cheese. Then add the mashed potatoes on top. Sprinkle the rest of the cheese on top and bake at 350 degrees for 20-30 minutes or until bubbly.

1 tbsp orange juice concentrate
3 tbsp Maraschino cherry juice
6-8 whole cloves
½ c brown sugar

Place ham in the crock pot and score it. Cook on low for 1-2 hours Place cloves in the scores and pine apples on top. In a small bowl mix brown sugar, pineapple juice, orange concentrate, and cherry juice. Stir until glaze becomes smooth. Pour over ham for last hour. Baste with juices and sauce every 15-20 minutes during the last hour.

Add chocolate chips and fold them in. Scoop into muffin cups and bake for 15-20 minutes or until toothpick comes out clean. This makes about 16 regular size muffins.

1-2 tomatoes diced
1 3.8 oz can of sliced black olives (drained)
2 green onions sliced (1/2 tsp onion powder)
1 16oz pkg of spaghetti or favorite pasta (cooked and cooled)
Place all ingredients into a large mixing bowl. Toss with tongs and let sit for about3-4 hours to chill and incorporate all the flavors. Serve cold.

2 tsp baking powder
3 c whole wheat flour (or all purpose)
2 cup chocolate chips(optional)
In a large mixing bowl combine banana, apple sauce,honey, agave, eggs, vanilla, and concentrate until well mixed. Add flour, salt, baking powder, and baking soda. Mix until well blended. Place in to 2 greased bread pans and bake at 350 degrees for 40-60 minutes or until tooth pick comes out clean.
¾ c apple sauce or vegetable oil
¾ c honey
½ c sugar or ¼ c agave
1 tsp vanilla
1 tbsp orange juice concentrate
3 eggs lightly beaten
½ tsp salt
1 tsp baking soda
2 tsp baking powder
3 c whole wheat flour (or all purpose)
2 cup chocolate chips(optional)
In a large mixing bowl combine banana, apple sauce,honey, agave, eggs, vanilla, and concentrate until well mixed. Add flour, salt, baking powder, and baking soda. Mix until well blended. Place in to 2 greased bread pans and bake at 350 degrees for 40-60 minutes or until tooth pick comes out clean.

Breakfst Casserole
10 eggs
1 16 oz pkg of breakfast sausage
1 tsp onion powder
1 small package of hash browns or tater totts (or 3 c diced or shredded potatoes)
½ tsp salt
1 c half and half or ½ c whipping cream and half cup milk
1 c shredded cheese
1/2tsp pepper
Cook sausage and drain. Pat dry with a paper towel. In a medium bowl beat eggs, half and half, onion powder, salt, and pepper. In a large lightly sprayed casserole dish place the potatoes on the bottom. Next add sausage and cheese. Pour egg mixture over the top and cover with foil. Bake in the oven for about an hour at 375 degrees or until the center is cooked through.

1lb favorite type of pasta cooked

Whisk until thickened about 10-15 minutes. Add cheese until melted and the pour over parsley. You can add add a little paprika and parsley to the top to garnish it.

1 tsp baking soda
2 c mini chocolate chips
Mix together in mixer or medium sized bowl sugar, egg, and vanilla. Next add cocoa and oatmeal until well blended. Then add flour, salt, baking powder, and baking soda until completely mixed in. Add in chocolate chips and stir until blended in. Scoop onto lightly greased cookie sheet and bake at 400 degrees for 10-12 minutes. Cool on a cooling rack for 5-10 minutes and then enjoy.

1/8 c olive oil or apple sauce
2 tsp salt
2 ½ c warm water
4 c whole wheat flour
3 c all purpose flour
Dissolve yeast, agave, and ½ c of warm water and let sit about 5 minutes. Next add oil, salt, water, and flour. Kneed until smooth. Let rise is a large lightly oiled bowl for about 1 hour or until doubled in size. Punch down and separate into 2 lightly greased bread loaf pans. Bake at 350 degrees for 30-35 minutes or until golden brown.

8-10 chicken breasts
2 tsp Italian seasoning
3 c chicken stock
1 c apricot preserves
½ tsp pepper
½ tsp salt
4 Tbsp cornstarch
¼ c hot water
Put all items except for the corn starch and water in the crock pot. Cook on low heat for about 6-8 hours or on high for 3-4 hours ( until chicken is cooked). When done remove the chicken. Mix cornstarch and water until dissolved and whisk into the broth. It will thicken up. Spoon over chicken.

¾ c blueberries ( frozen or fresh)
Preheat oven to 400 degrees. Grease 12 2 ½ muffin cups or line with paper baking cups. In a Medium bowl combine sugar, egg, milk, and apple sauce. Next add flour, baking powder, and salt. Stir until moistened. Then add blueberries and fold them in. Spoon batter into the baking cups and bake for 18-20 minutes or until golden and tooth pick comes out clean. Cool muffins for 5 minutes. Enjoy.

Italian Meatballs
2lbs ground beef
1lb American sausage
2/3 c Italian bread crumbs
1 tbsp dried onion
2 eggs slightly beaten
2 tbsp Parmesan cheese
2 tsp dried basil
1tsp salt
1tsp cracked pepper.
Mix together and make into golf ball sized balls. Pour 1 tbsp oil into a large skillet and brown the meatballs on all sides ( about 2 min per side). Then place into spaghetti sauce to finish cooking for about 1 hour ( I put mine in the crock pot for the remainder of the time). You can bake then at 350 for 20-30 min or until juices run clear and enjoy with BBQ sauce.

recipe's
So I have decided that I will start to type my recipe's and then upload them on the blog. Things have been crazy as we just moved and I now have a nice sized kitchen that I can actually make some fun things in and stuff. Hopefully I will be able to take some pictures (children permitting). I know I need to do more with my blog since I have been neglecting it lately and all so my resolution is to post some up dates and some new recipe's weekly. The first ones may be without pictures but that is ok. Cambria is having a hard time adjusting to the move and we are working on getting Brexten's ADHD under control so that he can function around people but just going to church is a chore with him so this will be a big work in progress. Chad is loving his job at L3 Communications and I am enjoing being a stay at home mom even though it is stressfull trying to work things out with Brexten. At least we have a spycholgist that is helping us to help him now.
